From Middle English yest, yeest, gest, gist, from Old English ġist, ġyst, from Proto-Germanic *jestuz. Cognate with Saterland Frisian Jääst (“yeast”), Dutch gist (“yeast”), German Gischt (“yeast”), Swedish jäst (“yeast”).
