From the attributive form of the Early Middle Japanese adjective atarashi: /atarashiki/ > /atarashii/, with the medial /-k-/ falling out. Originally meant "precious" or "regrettable", /atarasi/ took on the meaning of "new" from /aratasi/ when the medial -rata- metathesized to -tara-.
