Borrowed from French bistro, according to folk etymology version borrowed from Russian бы́стро (býstro) "quickly" in 1814, when Russian Army was in Paris.
In actual fact, the word is pure French, first attested only in 1884, possibly from bistingo (pub). Especially the last letter 't' completely excludes Russian origin.
